Ingredients:

For the Dough:

  • 2 cups all-purpose flour (maida)

  • 4 tablespoons oil or ghee

  • ½ teaspoon salt

  • ½ teaspoon carom seeds (ajwain)

  • ½ cup water (as needed)

For the Filling:

  • 3-4 medium potatoes (boiled & mashed)

  • ½ cup green peas (boiled)

  • 1 teaspoon cumin seeds

  • 1 teaspoon ginger (grated)

  • 2 green chilies (finely chopped)

  • 1 teaspoon garam masala

  • 1 teaspoon coriander powder

  • ½ teaspoon turmeric powder

  • ½ teaspoon red chili powder

  • 1 teaspoon dry mango powder (amchur)

  • 2 tablespoons chopped coriander leaves

  • 1 tablespoon oil

  • Salt to taste

For Frying:

  • Oil (as needed)

Instructions:

Step 1: Prepare the Dough

  1. In a mixing bowl, combine flour, salt, and carom seeds.

  2. Add oil and mix well until the flour turns crumbly.

  3. Gradually add water and knead into a stiff dough. Cover and let it rest for 30 minutes.

Step 2: Prepare the Filling

  1. Heat oil in a pan and add cumin seeds. Once they splutter, add ginger and green chilies.

  2. Add boiled potatoes, peas, and all the spices. Mix well and cook for 2-3 minutes.

  3. Add chopped coriander leaves, mix, and let the filling cool completely.

Step 3: Shape the Samosas

  1. Divide the dough into small portions and roll each into a thin oval (about 6 inches).

  2. Cut each oval in half to form two semicircles.

  3. Take one semicircle, apply water along the edges, and shape it into a cone.

  4. Fill with the prepared potato mixture and seal the edges properly.

Step 4: Fry the Samosas

  1. Heat oil in a pan over low-medium heat.

  2. Fry the samosas in batches, turning occasionally, until golden brown and crispy.

  3. Drain excess oil and serve hot with chutney or ketchup.

Your crispy homemade samosas are ready! Enjoy with tamarind or mint chutney and a hot cup of tea. ☕🥔✨
