½ cup water (as needed)
For the Filling:
3-4 medium potatoes (boiled & mashed)
½ cup green peas (boiled)
1 teaspoon cumin seeds
1 teaspoon ginger (grated)
2 green chilies (finely chopped)
1 teaspoon garam masala
1 teaspoon coriander powder
½ teaspoon turmeric powder
½ teaspoon red chili powder
1 teaspoon dry mango powder (amchur)
2 tablespoons chopped coriander leaves
1 tablespoon oil
Salt to taste
For Frying:
Oil (as needed)
Instructions:
Step 1: Prepare the Dough
In a mixing bowl, combine flour, salt, and carom seeds.
Add oil and mix well until the flour turns crumbly.
Gradually add water and knead into a stiff dough. Cover and let it rest for 30 minutes.
Step 2: Prepare the Filling
Heat oil in a pan and add cumin seeds. Once they splutter, add ginger and green chilies.
Add boiled potatoes, peas, and all the spices. Mix well and cook for 2-3 minutes.
Add chopped coriander leaves, mix, and let the filling cool completely.
Step 3: Shape the Samosas
Divide the dough into small portions and roll each into a thin oval (about 6 inches).
Cut each oval in half to form two semicircles.
Take one semicircle, apply water along the edges, and shape it into a cone.
Fill with the prepared potato mixture and seal the edges properly.
Step 4: Fry the Samosas
Heat oil in a pan over low-medium heat.
Fry the samosas in batches, turning occasionally, until golden brown and crispy.
Drain excess oil and serve hot with chutney or ketchup.
