Date & Nut Energy Bites



Ingredients:

  • 1 cup dates (pitted and soft)
  • ½ cup almonds
  • ½ cup cashews
  • 2 tbsp walnuts 
  • 1 tbsp chia seeds 
  • 1 tbsp flaxseeds 
  • 1 tsp cocoa powder 
  • ½ tsp cinnamon powder 
  • 1 tsp honey or maple syrup 
  • 1 tbsp desiccated coconut

Instructions:

  1. Prepare the DatesIf the dates are dry, soak them in warm water for 10 minutes and then drain.
  2. Blend EverythingIn a food processor, add the dates, almonds, cashews, walnuts, chia seeds, flaxseeds, cocoa powder, and cinnamon. Blend until the mixture becomes sticky and well combined.
  3. Form the BitesTake small portions of the mixture and roll them into bite-sized balls. If the mixture is too dry, add a teaspoon of honey or maple syrup.
  4. Coat (Optional)Roll the bites in desiccated coconut for extra flavor.
  5. Chill & StorePlace the bites in an airtight container and refrigerate for at least 30 minutes. 

They stay fresh for a week in the fridge!
