Date & Nut Energy Bites
Ingredients:
- 1 cup dates (pitted and soft)
- ½ cup almonds
- ½ cup cashews
- 2 tbsp walnuts
- 1 tbsp chia seeds
- 1 tbsp flaxseeds
- 1 tsp cocoa powder
- ½ tsp cinnamon powder
- 1 tsp honey or maple syrup
- 1 tbsp desiccated coconut
Instructions:
- Prepare the Dates – If the dates are dry, soak them in warm water for 10 minutes and then drain.
- Blend Everything – In a food processor, add the dates, almonds, cashews, walnuts, chia seeds, flaxseeds, cocoa powder, and cinnamon. Blend until the mixture becomes sticky and well combined.
- Form the Bites – Take small portions of the mixture and roll them into bite-sized balls. If the mixture is too dry, add a teaspoon of honey or maple syrup.
- Coat (Optional) – Roll the bites in desiccated coconut for extra flavor.
- Chill & Store – Place the bites in an airtight container and refrigerate for at least 30 minutes.
