Ingredients:

  • 4 cups grated carrots (about 5-6 medium-sized carrots)

  • 2 cups full-cream milk

  • ½ cup sugar (adjust to taste)

  • ¼ cup ghee (clarified butter)

  • ½ teaspoon cardamom powder

  • 2 tablespoons chopped nuts (almonds, cashews, pistachios)

  • 2 tablespoons raisins (optional)

Instructions:

  1. Cook the Carrots – In a heavy-bottomed pan, add grated carrots and milk. Cook on medium heat, stirring occasionally, until the milk reduces and thickens (about 20-25 minutes).

  2. Add Sugar & Ghee – Stir in the sugar and cook for another 5-7 minutes until it dissolves completely. Add ghee and mix well, cooking for another 5 minutes until the halwa starts leaving the sides of the pan.

  3. Enhance the Flavor – Add cardamom powder, chopped nuts, and raisins. Mix well and cook for another 2-3 minutes.

  4. Serve & Enjoy – Garnish with more nuts and serve warm or chilled.
